1 lb. fresh chicken livers, rinsed well, BROILED
5 Tb. schmaltz
2 c. yellow onions, chopped
4 large hard-boiled eggs, quartered
1/4 tsp. ground nutmeg
salt & pepper, to taste

Directions:
Directions:
Melt schmaltz in a large skillet over medium-high heat. Add onions and sauté until soft and golden. Add livers and cook 2 minutes more.

Remove from heat and let cool slightly. Place liver and onions in a food processor. Pulse a few times, so that livers are ground but not a paste.

Add eggs and seasonings and pulse a few more times until the ingredients are mixed, but not completely smooth.

Serve with matzo crackers or rye bread pieces.

I always serve it with the "everything flavor" Tam Tams.
