1 cup softened butter or margarine
½ cup confectioners sugar
1 teaspoon vanilla
2 ¼ cups flour
¼ teaspoon salt
¾ cup finely chopped nuts (optional but yummy)

Heat oven to 400º

Mix butter, sugar and vanilla. Work in flour, salt, and nuts until dough holds together. Shape into 1 inch balls and place on ungreased cookie sheet.

Bake 10 minutes or until set but not brown. These can be a little tricky, if you cook them too long they'll be dry and crumbly. They shouldn't have hardly any color (browness) when you remove them from the oven.

While still warm, roll in powdered sugar. Cool, then roll in powdered sugar again.

These have been a Christmas tradition for many years. It's the only time of year I make them for some reason. They'd make a good Easter cookie too.
