3/4 cup shortening
1-1/2 cups sugar
1-1/2 tsp vanilla
2 eggs
2-1/2 cups sifted self-rising flour
1 cup milk
3 cups pared chopped apples
1 cup chopped pecans
Caramel Topping

Directions:
Directions:
Preheat oven to 300º. Grease a 13 x 9 x 2 inch baking pan. Cream shortening, sugar and vanilla until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Alternately add flour and milk to creamed mixture; beat just until blended. Stir in apples and pecans. Pour into prepared pan. Bake 1 hour 10 minutes, or until toothpick inserted in center comes out clean. Remove from oven and pour hot Caramel Topping over hot cake. Cool in pan.

Caramel Topping
1/2 cup firmly packed brown sugar
1/4 cup butter or margarine
1/4 cup milk

Combine all ingredients in small saucepan. Heat and stir until blended. Boil 2 minutes.

If using all-purpose flour, sift 3 tsp baking powder and 3/4 tsp salt with flour.
