1 medium jar pimento-stuffed green olives (cocktail or salad olives)
¼ c. mayonnaise
non-GMO tofu (optional)

Pulse in food processor. Don't overblend.

Refrigerate overnight. Garnish with a whole olive.

I learned this quick and easy challah dip from Devorah Leah Gordon, one of the shluchos in Charlotte. Since then, olive dip has become extremely popular. I add tofu, when I have it on hand, to improve the consistency.
