5 c. water
1/3 c. firmly packed fresh mint leaves (plus, reserve 4 small sprigs for garnish)
1/2 vanilla bean, split lengthwise
4 orange spice tea bags
ice cubes
1/3 c. sugar or xylitol (optional)

Directions:
In a saucepan over medium-high heat, combine water, mint leaves, and xylitol, if desired. Scrape the vanilla seeds from the bean halves into the pan, then toss in the bean as well. Bring to a boil and stir.

Remove from the heat and add the tea bags. Cover and let steep for 10 minutes. Strain through a fine mesh sieve into a pitcher or jar. Press firmly against the solids with the back of a spoon to extract as much flavor as possible. Return the vanilla bean to the tea.

Cover and refrigerate until well chilled, 4+ hours or overnight.

Remove bean. Serve in tall glasses over ice with sprigs of mint.
