1 bunch broccoli
1 C rice (not Minute Rice)
1 medium onion
1 stick margarine
1 can cream of mushroom soup
Salt
Pepper
1 8oz Velveeta Cheese block

Directions:
Directions:
Cook broccoli. Cook rice. Fry 1 medium onion in one stick of margarine until transparent. Put onion mix in bowl, add cooked broccoli, cooked rice and one can cream of mushroom soup. Add salt and pepper to taste. Cut in small chunks of Velveeta cheese and mix in 2 quart casserole dish. Bake at 325 for 30 minutes.

I like to use a bunt pan instead of regular casserole dish so that it can be sliced and served in smaller portions for larger groups. This is an all year round favorite!
