Crock-Pot Corn Beef and Cabbage Recipe

1 onion, cut into wedges
4 potatoes, peeled and quartered
1 pound carrots, cut into large chunks
3 cups water
3 cloves garlic, minced
2 tablespoons sugar
2 tablespoons cider vinegar
1/2 teaspoon ground black pepper
1 (3 pound) corned beef brisket with spice packet, cut in half
1 small head cabbage, cut into wedges

1. Add vegetables and water to slow cooker.
2. Add spice packet, sugar, vinegar, garlic and pepper
3. Stir well
4. Place brisket on top of mixture and cover.
5. Cook on low for 8-9 hours or high for 4-5 hours or until vegetables are tender and brisket is cooked
6. During last hour of cooking add cabbage
