1/2 cup butter plus extra for greasing
2/3 cups soft light brown sugar
2 large eggs
1 cup plain flour, sifted
1 teaspoon baking powder
pinch of salt
1-2 teaspoons ground cinnamon (if you really like cinnamon you can add 1-2 tablespoons instead)
1-2 tablespoons of milk
1 1/4 cup peeled, cored and sliced cooking apple

For the crumble topping:

1/4 of vanilla sugar (or substitute with caster sugar)
1/4 of plain flour
1/4 of butter

Directions:
Directions:
1. Preheat oven to 350º
2. Using an electric mixer, cream the butter and brown sugar together
3. Add eggs - one at a time until smooth
4. Add dry ingredients
5. Add 1-2 tablespoons of milk for texture
6. Fold in apples
7. Pour into a greased springform pan with parchment paper on bottom
8. Using fingers mix together crumble topping until crumbly :)
9. Sprinkle crumble topping on top of mixture
10. Cook at 350º for approximately 35-40 minutes
