Cake
1 cup oil
1 cup self-rising flour
cup nuts (chopped)
2 cups sugar
3 eggs
2 cups grated carrots
1 tsp cinnamon
1 cup crushed pineapple
1 tsp vanilla

Frosting
1 stick butter
1 package cream cheese (8oz)
2 cups powdered sugar

Directions:

Cake
Preheat oven to 350
Cream oil, sugar and eggs.
Add grated carrots and pineapple, mix well.
Sift four and cinnamon together and add to creamed mixture.
Add vanilla and mix thoroughly.
Add nuts and pour into 4 greased and floured round cake pans.
Bake for 35-40 minutes.

Frosting
Cream all ingredients together and frost cake once it has cooled.
