1 cup Quick Oats
1 cup buttermilk
1 egg (beaten)
cup brown sugar
vegetable oil (or coconut oil)
1 cup self-rising flour

Directions:
Directions:
Pre-heat oven to 400
Soak oats in buttermilk for 15 minutes.
Mix egg, sugar and oil.
Add flour
Stir in oat mixture just until moistened.
Grease muffin cups and fill full.
Bake 16-18 minutes.
