4 salmon filets
2-3 T. prepared pesto sauce (non-dairy)
1 bag baby spinach, washed
⅓ c. pine nuts or crushed walnuts
olive or coconut oil
olive oil cooking spray to coat
salt and pepper to taste

Directions:
Directions:
Preheat oven to 350º. Prepare baking dish with cooking spray. Lay a bed of baby spinach in the bottom of pan. Season with salt and pepper. Drizzle with olive oil. Remove skin from salmon filets. Place filets in baking pan on top of spinach. Spread pesto sauce on tops of salmon, coating liberally. Sprinkle pine nuts over top of salmon and spinach. Bake until cooked through, approximately 15 minutes. Do not overcook. Serve salmon hot, with spinach on the side.
