4 large bunches of fresh broccoli
6-8 boneless chicken breasts
2 T virgin olive oil
6 T butter
6 T flour
1 1/4 C chicken broth
1 C milk or 1/2 & 1/2
2/3 C sherry wine
1 shredded fresh parmesan cheese
1 tsp salt
2 tsp fresh ground pepper
1/2 tsp nutmeg

Directions:

1) Brown chicken breasts in frying pan with olive oil or bake in oven. Drain. When cool cut into large pieces.
2) Steam broccoli for 5 min. or until crisp tender. Drain. When cut into 3-4 inch stalks with several flowerets at the top.
3) In a small sauce pan melt butter over medium heat. Whisk in flour and cook for about 2 min. Gradually whisk in chicken broth, sherry & milk. Bring to a boil and then reduce heat. Simmer until sauce thickens. 4) Add salt, pepper & nutmeg. Add 3/4 of the cheese and whisk until combined.
5) In a baking pan lay broccoli stalks horizontally on the bottom. Lay chicken pieces on top. Pour sauce so that it covers the top.
6) Best if refrigerated overnight. Bake at 325 for 35--40 minutes covered, sprinkle remaining cheese and cook another 5 min. uncovered.
