Base
6 tbsp melted butter
1 1/2 c graham water crumbs
6 tbsp sugar

Filling
1 c crushed pineapple
2/3 c sugar
1 tbsp plain gelatin
1/2 tsp salt
3 eggs, separated
1/2 tsp vanilla
2 tbsp lemon juice
12 oz cream cheese
3/4 c whipped cream

Directions:
Directions:
Combine base ingredients. Reserve 1/4 of this mixture for topping. Press remaining to bottom and sides of buttered pan and chill.
Filling
Drain pineapple into measuring cup, add water to syrup to make 1 cup of liquid. Combine with remaining 2/3 c sugar, gelatin and salt. Cook over med heat until gelatin is dissolved, stirring constantly. Remove from heat. Beat egg yolks and gradually add to gelatin mixture. Pour back into pot and cook over hot heat until slightly thickened, stirring constantly. Remove from heat. Add vanilla. Combing lemon juice and cheese (with hands) in large bowl. Pour back into gelatin mixture and beat with egg beater. Chill until thick but not set ( about 1/2 hour) Fold in pineapple, whipped cream and stiffly beaten egg whites. Pour into pan and top with remaining crumbs.

Set 3 to 4 hours or overnight
