Cookie Base:
1 cup butter, softened
1/2 cup sugar
2 cups flour

Lemon Topping:
4 eggs, whipped
1 1/2 cups sugar
1/4 cup flour
4 lemons, squeezed
Zest of one lemon

Directions:
Directions:
Preheat oven to 350º
Mix together 1 cup of softened butter, 1/2 cup of sugar and 2 cups of flour until completely combined. Add the dough to a 9x13 pan. Press down the dough to cover the entire bottom of the pan evenly. Bake at 350º for 15 minutes. While the cookie base is baking, whip four eggs. Add 1 1/2 cups of sugar to the eggs and mix well. Next, add 1/4 cup of flour, the juice of 4 lemons and the zest of one lemon to the sugar/egg mixture. Mix well. When the cookie base is done pre-baking, pour the lemon mixture on top and continue to bake for another 20 minutes at 350º. Let cool and cut into bars.
