5 - 6 C sliced onions
3 T butter, 1 T oil

1 tsp salt
¼ tsp sugar

3 T flour
2 Qt stock ( consomme + water)
2 T tomato paste

Baguette, silced to ¾ - 1 inch thickness
Swiss cheese

Directions:
Directions:
1. Cover and cook onions, butter, and oil slowly for 15 minutes.
2. Add sugar and salt (helps browning) and cook uncovered on moderate heat for 30-40 minutes.
Stir until onions brown.
3. Add flour and stir for 3 minutes.
4. Heat stock to boiling and blend into flour mixture.
5. Add ½ C white wine or dry vermouth and tomato paste.
6. Simmer, covered for 30-40 minutes or more. Skim occasionally
7. Brown bread slices on a cookie sheet 25-30 minutes at 325º
8. Place serving of soup in bowl, float bread covered with swiss chees and heat for 20 minutes at 325º
9. Broil top and serve
