1 cup uncooked rice
1 quart whole milk
1 cup sugar
1 stick butter or margarine
4 eggs
1 capful vanilla
1 lemon rind grated
Nutmeg

Directions:
Directions:
Cook rice as directed on the package (yields 3 cups).
Scald milk on top of the stove.
Remove from the burner and add the rice, making sure rice doesn't get lumpy. Let rice and milk cool.
Soften the butter/margarine and cream with the sugar.
Beat the eggs and gradually add to the sugar and butter mixture.
Mix in the vanilla and lemon rind.
Once rice and milk are cool, mix in the sugar and eggs.
Transfer to a 9 x 13 baking dish and sprinkle with nutmeg.
Cook at 350° for about 40 minutes. (Check in 30 minutes). The pudding should be firm enough to be sliced and golden brown on top.
