Whole beef tenderloin
1 red pepper
1 yellow pepper
1 carrot
1 parship
1 onion
2 garlic cloves
1 stalk celery
2 T olive oil
3 t white wine
Bearnaise sauce
¼ C cream
Leeks
toothpicks

Directions:
Directions:
Trim fat from tenderloin, split down the middle with sharp knife.

Filling: Finely chop vegetables and garlic, saute in olive oil until cook and add wine. Stuff beef with the filling.

Leeks: Drop leeks into boiling water to soften. Tie leaks around beef like a package with bows. Fasten with wooden tooth picks.

Bake at 350º for 1 hour or for preferred "doneness" (we tend to like ours well done). serve with Bearnaise sauce (mix with wine and cream).
