1 cup sifted flour
1 Tbsp sugar
½ tsp salt
½ tsp baking powder
½ tsp baking soda
2 eggs
1 cup buttermilk (¾ cup milk)
2 Tbsp butter

Directions:
Directions:
1. Sift dry ingredients into a mixing bowl.
2. Beat egg whites until stiff (but not dry)
3. Beat egg yolks until thick and lemon colored.
4. Stir buttermilk and butter into the yolks. Pour mixture over the dry ingredients.
5. Fold in egg whites.
6. Pour batter onto heated pan/griddle using about ¼ cup for each cake.

My grandmother used to make me these pancakes every time I went to visit. She would never make plain circles, they were always shaped like bunny rabbits, cats, puppies, etc.
