2 Tbsp olive oil
2 Tbsp butter
1 small onion, chopped
2 carrots, peeled and finely chopped
2 ribs celery, finely chopped
1 Tbsp minced garlic
Pinch of red pepper flakes
8 cups chicken broth
4 cups fresh or frozen tortellini
4 cups fresh spinach leaves, cut julienne
˝ cup chopped fresh basil
˝ cup shredded Parmesan cheese

Directions:
Directions:
In large stock pot, heat oil and butter. Add onion, carrots, and celery. Sauté until soft. Add garlic and pepper flakes and stir for 30 seconds. Add broth. Cover and simmer for 20 minutes. Add tortellini, spinach, and basil leaves. Cook until tortellini comes to surface, about 3 minutes. Season to taste. Serve with shredded Parmesan on top. 6 servings.
