2 c flour 1 (8½ oz) can crushed pineapple (drained)

2 tsp baking powder 1½ c chopped nuts

1½ tsp baking soda

1 tsp salt

2 tsp cinnamon

2 c sugar

1½ c oil

4 eggs

2 c grated carrots (4 large)

Directions:
Directions:
Sift flour, baking powder, baking soda, salt and cinnamon. Add sugar, oil and eggs and mix well. Add carrots, drained

pineapple and nuts. Turn into 3 greased and floured 9" layer pans. Bake at 350º for 35 to 40 minutes or until done .

Cool in pans for a few minutes, then turn out onto wire racks to cool. Fill layers, sides and top with Cream Cheese Frosting.


Cream Cheese Frosting:

Cream ½ c butter, 8oz package cream cheese and 1 tsp vanilla. Beat in 1 lb. confections sugar. If too thick add milk until

the right consistancey .
