3 cloves garlic
2 c. freshly picked basil
3 T. pine nuts
1 dash salt and pepper
1/2 c. EVOO
1/2 c. Parmesan cheese, grated

Directions:
Directions:
Using a mortar and pestle, add basil, garlic, salt, pepper and pine nuts to the mortar and grind with the pestle. Grind to a paste. Pound in the cheese. Finally whisk in the oil until you have a desired consistency. If too thick, add a tablespoon of water. Cover and refrigerate until you are ready to serve. Use the freshest possible ingredients for best results.
