1 lb. ground beef
1 can (16 oz.) whole kernel corn
1 pkg. taco seasoning
1 jar (16 oz.) salsa
1/4 tsp. crushed red pepper flakes
1/2 tsp. jalapeno, pickled, diced
2 c. cheddar cheese
1 box corn muffin mix
1 sm. can black olives, sliced, optional

Directions:
Directions:
Preheat oven to 375º. In 10” skillet over medium-high heat, cook ground beef until browned. Add corn with liquid, taco seasoning, salsa, red pepper flakes, jalapenos and cheese. Pour into 2 quart shallow baking dish. Prepare corn muffin mix per the package directions. Drop by spoonful’s on top of beef mixture. Bake 25 to 30 minutes or until top is golden brown and mixture is bubbling. Optional, sliced black olives sprinkled on top before serving. Note: You can use 2 cups frozen corn and ¼ cup water instead of canned corn.
