4 cups fresh tomatoes, cored, peeled, and chopped (8-10) or 4 cups canned whole tomatoes, crushed (We use the San Marzano canned, whole, peeled tomatoes and puree them in the blender)
3 cups tomato juice
1 cup chicken stock
12 -14 basil leaves, washed fresh and julienned
1 cup heavy cream
1⁄4 lb sweet unsalted butter
salt to taste
1⁄4 teaspoon cracked black pepper

Directions:
Directions:
1. Combine tomatoes, basil, juice/and or stock in saucepan. Simmer 30 minutes.
2. Puree using hand-held food blender in the cooking pan (or transfer to a food processor/blender if you do not have one). If needed, return to saucepan and add cream and butter, while stirring, over low heat. Garnish with basil leaves and serve with your favorite bread.

This is the best tomato basil bisque I have ever had and it is so easy! We like to top ours with homemade croutons and grated smoked gouda cheese.
