6 small (1-1/2 lbs) zucchini
1 lb. ground beef
1/2 cup onion
1 1/2 cups (2 slices) soft bread crumbs
1/4 tsp dried thyme
1/4 cup oleo
1/3 cup flour
2 cups milk
4 oz (1 cup) sharp cheese, shredded
1 T butter, melted
Salt and pepper to taste

Cut zucchini into 1/2-inch slices. Cook in boiling salted water 5 minutes, drain. Brown meat with onion in skillet, drain fat. Stir in 1/2 cup bread crumbs, thyme, salt and pepper. Remove from heat.

In saucepan, melt 1/4 cup butter or oleo, blend in flour and salt. Add milk all at once. Cook and stir until mixture thickens and bubbles. Add cheese, stir until melted. Stir in meat mixture.

Place half of zucchini in 2-quart baking dish. Pour half of cheese mixture on top. Repeat layers.

Combine remaining bread crumbs with 1 tablespoon oleo. Sprinkle over casserole. Bake at 350º for 30-35 minutes.
