3 extra large eggs
1½ tsp. olive (or vegetable) oil
2⅔ c. flour (⅓ of this for dusting)
¾ tsp. salt

Directions:
Directions:
Place eggs, salt, oil and 1 c. flour in food processor bowl with cutting blade.
Process 5 seconds. Scrape down sides of bowl.
Add 1⅓ c. flour and process until dough forms ball in bowl, and pulls away from sides (could need a little more or less flour). As you add flour the ball of dough becomes just dry enough to break apart into small pieces. There may be some flour left over. Remove the dough from the food processor and use hands to shape into a ball. Knead the dough two or three times by folding the dough in half and pressing it flat.
Cover dough, in plastic wrap, and let rest 10 minutes in the refrigerator.
Divide dough and put through pasta cutter (maker) or roll VERY thin on board and cut with a knife.
