2-1/3 cups unsifted all purpose flour
2/3 cup sugar
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp salt
1-1/2 cups shredded carrots
1/2 cup margarine, melted
1/2 cup orange juice
1 egg lightly beaten
1 tsp grated orange peel
1 tsp vanilla
1/2 cup raisins

Directions:
Directions:
Sift together flour, sugar, baking powder, cinnamon, baking soda and salt. Set aside.

Combine carrots, margarine, orange juice, egg, orange peel, and vanilla and mix well. Stir in raisins. Pour carrot mixture into dry ingredients and stir until combined. Spoon batter into greased and floured 9 x 5 x 3 loaf pan,

Bake in preheated 350º oven 45 to 50 minutes. Cool 5 minutes on wire rack. Remove from pan and finish cooling on rack.
