8 vanilla wafer cookies
1 egg
8 oz. cream cheese, softened
1 T. Butter
1 c. chopped peeled apples
⅓ c. sour cream
6 T. Sugar
1 tsp. vanilla
½ tsp. cinnamon

Directions:
Directions:
Preheat oven to 325ºF. Place paper liners in eight in small cup muffin pan. Place a cookie in the bottom of each cup. In a small skillet melt butter. Add apples; cook and stir until tender, about 5 minutes. Sprinkle with 1-tablespoon sugar and cinnamon; spoon over cookies. In a medium bowl beat cream cheese, egg, sour cream, vanilla and remaining sugar until smooth. Spoon over apples. Bake until set, about 25-28 minutes. Cool on a rack; remove cakes. Cover and refrigerate until cold, about 2 hours. Garnish with sour cream, apple slices or crushed wafers, if desired.
