1 can black beans, drained & rinsed
1 can white shoe peg corn (Green Giant)
½ cup chopped red onion
2 peppers chopped (orange, red)
1 can chopped green chilies
salt & pepper to taste
1 tsp. sugar
¼ cup white vinegar
⅓ cup oil (vegetable or olive)
½ cup packed fresh cilantro, chopped

Combine all ingredients. Refrigerate for at least 2 hours to allow flavors to blend. Can be served with taco chips, crackers, or even as a summer side dish!
