4 Sweet Onions sliced 1/4 inch thick

Batter
1 cup sifted flour
1 tsp. baking powder
1/4 tsp. salt

1 egg
1 cup milk
1 tbsp vegetable oil

Directions:
Fix Batter first.
Beat 1 egg in deep bowl until thick and lemon colored. Add 1 cup milk, 1 tbsp. vegetable oil and stir in sifted ingredients. Beat until smooth. Cover and set aside while preparing onions.
Fry - in electric skillet or heavy frying pan, add oil or shortening 1-1/2 to 2 inches deep. Ideal temp 375º. Dip a few onion rings at a time in batter using long handled fork and let drain briefly before dropping into oil. Turn only once and do NOT crowd in skillet. When golden brown on both sides, lift out and drain. Serve hot immediately or freeze.
