1 lb. Chicken Breast, boneless, skinless, and cut into cubes
2 Tbsp. Vegetable Oil

½ cup Green Pepper, sliced
½ cup Red Pepper, sliced
1 cup Carrot strips
1 clove Garlic, minced

1 Tbsp. Corn Starch
¼ cup Soy Sauce
1-8oz. can Pineapple Chunks, juice reservered
1 Tbsp. Vinegar
1 Tbsp. Brown Sugar
½ tsp. Ground Ginger

Directions:
Directions:
Brown Chicken in oil in a large skillet at med.high heat. Add the peppers, carrots and garlic and stir fry for 1-2 minutes.
In a small bowl combine the corn starch and soy sauce and mix together, pour mixture into the skillet, along with pineapple, liquid, vinegar, sugar, and ginger. Stir together and bring to a full boil. Serve with rice.
