Ingredients: 1 20 oz package 3 cheese tortellini 1/2 cup mayonnaise 1/2 cup olive oil 1/4 teaspoon oregano 1/4 teaspoon thyme 1 garlic clove, pressed 1 13 3/4 oz can of artichokes, drained and chopped (water-packed) 2 cups chopped celery 1/4 cup red wine vinegar 1 1/2 teaspoons Dijon mustard 1 teaspoon sugar 1/2 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon dried basil 1/2 cup Kalamata olives 1/2 cup grated parmesan cheese 3/4 cup green onions, chopped 1/2 cup sundried tomatoes in olive oil, drained and chopped

Directions:Cook pasta per package directions, drain. Whisk mayonnaise and next ten ingredients in small bowl until well-blended. Season with salt and pepper. Transfer 3/4 cup of the dressing to a large bowl. Mix in vegetables. Add pasta and parmesan cheese. Add dressing as desired. Season with more salt and pepper if needed. Can be made a day ahead. Serve cold or at room temperature. |
