1 1/2 lbs of 85/15 ground beef
1 medium onion, finely chopped
28 oz diced canned tomatoes
2 cups water
32 oz beef broth/stock/consumme
3/4 cup diced carrots
3/4 cup diced celery
1/2 cup raw barley
8 oz canned mushrooms, drained
1 bay leaf
Pepper to taste

Add if desired: cauliflower, zucchini, green beans or whatever veg you have in the fridge.

Brown ground beef. Cook while breaking it up. Drain if necessary. Add onions and then remaining ingredients. Simmer on low heat with the lid on for at least a couple of hours or all day in a slow cooker.

This is a recipe from the old Best of Bridge cookbook. It was always a favorite of mine as a child and then I was reintroduced to it when my father died and family friends brought their own preparations to Moms after the funeral. This is a wonderful Canadian comfort food.
