6 T. butter
1 T. minced onion
˝ c flour
4 c chicken broth
2 c cooked wild rice
1/3 c minced ham
1 c sliced mushrooms
˝ c finely grated carrots
˝ t salt
1 c half and half
2 T dry sherry

Directions:
Directions:
Melt butter in saucepan and sauté onion until tender. Blend in flour; gradually add chicken broth. Cook, stirring constantly, until mixture comes to a boil. Boil one minute Stir in rice, ham, carrots, almonds, and salt; simmer 5 minutes. Blend in half and half and sherry; heat to serving temperature. Garnish with parsley or chives.
