3 eggs
2 C. sugar
1 C. oil
2 C. grated zucchini
3 tsp. vanilla
3 C. flour
1 tsp. salt
1 tsp soda
¼ tsp. baking powder
3 tsp. cinnamon
1C. nuts, chopper (optional)

Directions:
Directions:

Mix the eggs, sugar, and oil. Add zucchini and the vanilla. Sift the flour, salt, soda, baking powder and 3 teaspoons for cinnamon. Add the nuts. Pour into pans and bake at 325º for 1 hour.
