1 cup hard wheat

1 cup soft white wheat or:
3 Tablespoon millet
3 Tablespoon rye
4 Tablespoon buckwheat
3 Tablespoon oats
3 Tablespoon brown rice

½ teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
Pinch of spice - suggestions :
cinnamon, nutmeg,
mace, ginger, allspice.
Use just a couple of spices. a pinch goes a long way.
2 eggs, separated
2 cups buttermilk
1 cup milk
½ cup water
1 teaspoon vanilla

Grind wheat & mixed grains together. Add baking soda, powder, salt and spices to the flour- mix well.

Separate egg whites into separate bowl to be beaten. Combine egg yolks, buttermilk, milk, water, and vanilla. Mix thoroughly. Beat egg whites until stiff. Add dry ingredients to the buttermilk mixture and fold in egg whites.

Serving ideas: one batch serves our family of 2 adults and 2 small children with at least one leftover waffle. Try topping with plain yogurt and either fresh fruit or fruit preserves! More healthy and quite tasty!
