1 cup butter
2 eggs, separated
½ cup brown sugar
½ tsp. salt
2 tsp. baking powder
2 cups flour
1 tsp. vanilla
Chopped nuts
Jam

Directions:
Directions:
1. Cream butter and sugar.

2. Add egg yolks well beaten.

3. Sift and add dry ingredients.

4. Roll into small balls.

5. Dip balls into slightly beaten egg whites.

6. Then cover balls with chopped nuts.

7. Press in the middle of the cookie with a thimble (or your thumb.)

8. Press again half way through cooking time.

9. Bake in a 350º oven.

10. When baked fill center with jam or jelly while still warm.

This is a good way to use up that lost jar of jam at the back of your fridge. Of course, Mum never had any lost jars of jam hiding in the fridge. All of Mum's jam was homemade and preserved for the winter.
