1 lb. ground beef

1 c. diced onion

1 small can enchilada sauce

1 small can tomato sauce

1 can large black olives (pitted)

12 corn tortillas

1½ c. shredded Cheddar cheese

Directions:
Directions:
In skillet, brown meat and onions. Pour off grease. Add enchilada sauce and tomato sauce. Bring to boil. Cover and simmer
for 15 minutes. Meanwhile, drain olives and slice into thirds. In a round 1½ to 2 quart casserole dish, put small amount of sauce on bottom. Next add 2 tortillas, followed by meat sauce to slightly cover tortillas, ¼ of the olives and ¼ of the cheese.
Continue to make layers, ending with meat sauce and cheese on top. over and bake 30 - 40 minutes at 325º or until sides of mixture bubbles.
