6 boneless chicken breast
1 1/2 cup flour
1 tsp. parsley
1/4 tsp. salt
2 eggs beaten
1/2 cup half and half
1/4 cup olive oil
1/4 cup butter
1 lb. sliced fresh mushrooms
3 shallots minced
juice of 1 lemon
1 cup marsala wine

Directions:

Trim and pound chicken breast to 1/4 inch thick.

Mix together flour, parsley, and salt.

Beat eggs and half and half together.

Dip chicken in egg mixture and then flour mixture.

Heat oil in a skillet and cook chicken until golden brown and cooked through. Remove from the pan and set aside.

Melt butter in the skillet. Add mushrooms and shallots and sauté for 5 minutes. Add the marsala wine and lemon juice. Simmer for 5 minutes. Add the chicken back to the pan and simmer for 10 minutes.
