1/2 lb. dry navy beans
1 tbsp. olive oil
4 cloves minced garlic
1 onion minced
1 can tomato paste
left over ham and bone
1 tbsp. dried oregano
1 tbsp. dried parsley
red pepper flakes to taste
1/2 box elbow macaroni

Directions:
Directions:
Soak navy beans over night.

Heat oil in large pot and sauté onion and garlic.

Add the ham bone and cover with enough water that it covers the top of the ham. Simmer for about an hour then add tomato paste, beans, oregano, and parsley.

Cook until ham falls off the bone and the beans are soft.

Cook elbow macaroni separately, drain and add to the soup at the end.

You can add additional water as needed if it gets to thick.

Salt and pepper to taste but it is usually pretty salty because of the ham.
