1 tbsp. Olive Oil
3 med. Carrots, diced small
2 stalks Celery, diced small
3/4 cup Purple Onion, diced small
˝ Green Pepper, diced small
˝ Red Pepper, diced small
2 cups Rice (raw)
˝ tsp. Salt
2 dashes Cayenne Pepper
4 cups Boiling Water
3 pkg. Oxo Chicken Granules

Directions:
Directions:
Heat deep pan and add Olive Oil. Sauté carrots,and celery for 2-3 min. Add the other vegetable and rice and sauté until rice is opaque and onion is limp. Add salt, cayenne, and chicken broth granules to the boiling water and add to the vegetable rice mixture. Cover and simmer for 20 min. or until water is absorbed.
*May add 1 cup of frozen peas or 2 small tomatoes, seeded and chopped (about 2/3 of a cup)

If made in an electric fry pan, set between 280-300 degress for 20 minutes
