4 small eggplant
1/3 c. grated cheese
1 egg
bread crumbs
1/2 c.
3 cloves garlic
olive oil
salt and pepper
pasta sauce
mozzarella

Directions:
Directions:
Cut eggplant in half long ways
scrape inside and leave shell
in a skillet saute garlic when garlic begins to brown add eggplant
cook on low for about 8 min until eggplant is soft.
put in bowl.
add egg cheese bread crumbs
salt and Pepper
mix it should be paste like
fill eggplant shells and place in a pan with some pasta sauce on bottom of pan.

Bake at 350 for about 30 min top with cheese and mozzarella.
put back in over melt cheese.
