1/4 c. chopped red, yellow and orange pepper
cucumber
carrots
celery
red onion
broccoli
**your vegetable amount will be larger than the amount of cous cous**
**really what ever vegetable you want**
some parsley (freshly chopped, ~1 tbsp.)
1 c. Jerusalem Cous Cous, cooled, tossed in with some olive oil

Mix ingredients and mix with some good old Italian dressing, salt and pepper to taste
