1 c. rolled oats
1 tsp. baking soda
1 1/4 c. boiling water
1/4 tsp. nutmeg
1 1/2 c. all-purpose flour
4 oz. butter
1 tsp. cinnamon
2 eggs
1/2 tsp. salt
1 tsp. vanilla
1/2 c. sugar

Topping:
5 oz. butter
2/3 c. brown sugar
1/4 c. light cream
2/3 c. nuts
1 c. shredded coconut

Directions:
Directions:
Grease 9" cake pan. Place oats in a bowl with boiling water and let stand 20 minutes. In a large bowl cream butter and sugar; add eggs and vanilla. To sugar mixture add rolled oats and dry ingredients. Blend mixture until moist. Pour into pan. Bake at 350º for 40 minutes. While bake make topping. Cream butter and sugar. Stir in cream, nuts and coconut. Top cake with coconut topping and broil until golden brown. Can be garnish with APPLES CONFETTI

1/2 c. unsalted butter
1 c. sugar
2 Tbs. brandy
2 tsp. lemon juice
4 granny smith apples

Directions:
Directions:
In a sauté pan on medium heat, melt butter then stir in the sugar. Simmer, stirring occasionally until it begins to turn golden brown and caramelized. Add brandy and lemon juice to the pan and simmer to incorporate. Peel, half and core apples. Place apples in caramel and cook slowly to caramelize and tenderize. Can also be served warm over ice cream.
