CREAM CHEESE ICING

3 c. all purpose flour
1 tsp. salt
1 tsp. baking soda
2 c. sugar
8 oz. can crushed pineapple
3 beaten eggs
1 c. chopped pecans
1 1/2 tsp. vanilla
2 c. mashed bananas
1 tsp. cinnamon
Directions:
Directions:
Combine flour, baking soda, salt, sugar and cinnamon in a large bowl; add eggs and oil. Stir until dry ingredients are moistened. (DO NOT BEAT) Stir in vanilla, undrained pineapple, pecans and bananas. Pour into 3 greased and floured 9" round cake pans. Bake at 350 degrees for 25 -30 minutes or until toothpick comes out clean. Cool in pans for 10 minutes. Remove from pans and let cool completely on wire racks. Top with Cream Cheese Icing.
 

CREAM CHEESE ICING
Ingredients:

8 oz. Cream Cheese, softened
1/4 cup butter, softened
1 tsp. vanilla or almond flavoring
1 pkg. (16 oz.) powdered sugar (about 4 cups)

Directions:
Cream butter, cream cheese and vanilla in large bowl with mixer until blended smooth.
Add sugar spoonfuls at a time, beating after each addition until blended. Place in refrigerate to harden so that you can spread better.
