ITALIAN CREAM CAKE |

Ingredients: 5 eggs 1/2 c. butter 1/2 c. shortening 2 c. sugar 2 c. twice sifted flour 1 tsp. baking soda 1 c. buttermilk 1 c. coconut 1 c. chopped nuts 1 tsp. vanilla 1 tsp. coconut flavoring

Directions: |
Directions:Separate eggs and beat egg whites until stiff; set aside. Cream butter, shortening and sugar in a large bowl. Add egg yolks 1 at a time, beating well after each one. Dissolve soda in buttermilk; add alternately with flour. Beat well; add coconut, nuts and flavorings. Fold in stiffly beaten egg whites. Pour into 3 greased and floured 9" cake pans. Divide into about 2 cups for each pan. Bake at 350 degrees for 25 minutes. Top with Cream Cheese Icing, but substitute almond flavoring for vanilla. |

Ingredients: 8 oz. cream cheese 1/2 c. butter 16 oz. pkg. powdered sugar 1 tsp. vanilla

Directions: |
Directions:Let cream cheese and butter come to room temperature. In a medium bowl cream butter and cream cheese together. Sift sugar into mixture and blend in vanilla. Spread onto cake. May top with pecans or walnuts. |
