½ cup olive oil
10 cups sweet potatoes, peeled and diced
1 onions, chopped
1 tablespoon chopped garlic
1 tablespoons cumin
1-teaspoon chipotle chili powder
1tablespoons chili powder
3 cups diced canned tomatoes
2 cups water
1 1/2 cups cooked dried black beans
¼ cup fresh lime juice
Salt and pepper
Fresh cilantro

Directions:

Place black beans in a large pot and cover with water. Soak overnight or bring to a boil and simmer. Cook beans till they are soft. Drain and set aside.

Heat the olive oil in a pan, add sweet potatoes and onions. Cook over med heat till the onions are soft. Stir in the garlic, chipotle chili powder, cumin, and chili powder. Cook over med heat for 30 seconds. Add water and bring to a simmer. Cook till the potatoes are tender. Add the beans, tomatoes, and lime juice. Continue to cook over low heat until slightly reduced. Season with salt and pepper. Remove from heat in stir in the cilantro.
