4 C. quite warm water
3 Tblsp. fast acting yeast (I use regular yeast)
3/4 C. Honey
1 Tblsp. salt
10-11 C. whole wheat flour (fresh ground if possible)

In large bowl add water, yeast, honey, and salt. Let rest till yeast is foamy. Add flour 1 C. at time stirring between each cup of flour. I like to really stir it a lot once it starts to get thick. I like to stir it til it's stretchy. Then continue adding flour til it needs to be kneaded. Continue to add a little at at time to make a soft dough. It's ok it you quit while still a bit sticky. Let it rise, punch down and shape into 4 medium or 2 Large loaves. (I have found that when working with dough, it seems to rise faster after each time I knead it down. So if I want it to hurry, I just knead it more often.) Place in greased pans. Let rise til double in size. Bake in 350º preheated oven for 30 minutes. Remove from pans immediately.
