1 lb. crawfish tails
1 medium onion, chopped
1 c cornmeal
2 tsp. salt
1 tsp. baking soda
3 eggs
1/4-1/2 cup sliced jalapenos
8 oz. grated cheese
1/3 c. oil
16 oz. can cream style corn

Directions:
Directions:
Cook crawfish with onions until tender. In a bowl combine cornmeal, salt, baking soda and set aside. Beat eggs and add peppers, cheese, oil, corn and crawfish mixture. Add cornmeal mixture and blend well. Pour into either a 9x13 or larger pan, baking at 350 degrees for 55 minutes until golden brown or knife comes out clean.
