2 c. cornmeal
1 c. self-rising flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 eggs
2 c. buttermilk*
2 Tbs. hot oil

Directions:
Directions:
Preheat oven to 375º. Mix dry ingredients together. Add beaten egg and milk. (If buttermilk is not available make sour milk by adding add 2 tsp. lemon juice or vinegar to milk and let set a few minutes until thickened.) Get oil hot in a large iron skillet. Coat bottom of skillet, when heated pour excess oil into cornmeal mixture. Blend well and pour into hot skillet. Bake 20-30 minutes. Will pull away from edges and be brown.
