Use enough (Farro Barley whole) for 4-6 people
Prepare farro (boil) and drain till al dente
Prepare 1 hour before serving
Chop handful basil
Use handful of baby ball mozzarella and half these
Handful toasted pine nuts
3-4 tablespoons grated Parmigian
Halve cherry tomatoes
Small clove of garlic
Mix and
Drizzle with good olive oil and salt and pepper

For middle-eastern version use cilantro and cumin, onion, roasted vegetables, cumin and

Rene Finke and Homestead Catering of Charleston served this on a photo shoot for Sunbrella that I produced in Charleston where her company did the catering for the project. It was one of the best salads I had ever eaten, chewy firm and fresh tasting.
